Cut the chicken into small pieces and add to a food processor (if you use a local butcher ask them to mince your chicken if posible!)
Next, dice up your red pepper and onion
Mix the chicken, onion, red pepper, one egg, cajun seasoning (to taste), olive oil, salt and black pepper together
From the mixture make 2 burgers ready to grill or BBQ
