The use of a slow cooker is preferred or an oven at a very low heat is required.
Stud tenderloin with cloves and rub with seasoning.
Place the tenderloin in the slow cooker and top with thinly sliced red onion.
Next, cover the tenderloin with water and slow cook for 8-10 hours.
Remove the cooked tenderloin from the cooker, discard the water and fat.
Allow the pork to cool, then shred by hand or with a fork. Finally, return the shredded pork to the cooker and add the barbecue sauce and heat for a further 1-2 hours.
